3-Ingredient Mango Coconut Popsicle Prep time: 10 mins Cook time: 4 hours Total time: 4 hours 10 mins Serves: 8 popsicles A quick vegan treat with tropical flavors of mangoes and coconuts. It's creamy, luscious, and sweet. Perfect for the summer!
Ingredients
  • 2 ripe manila mangoes (or 1¼ cup frozen mango chunks)
  • 1 can coconut milk (13.5 ounces), (or non-dairy milk of choice)
  • 2 tablespoons maple syrup (or sweetener of choice) (add extra tablespoon if using frozen mango chunks)
  • Equipment:
  • blender
  • popsicle mold
Instructions
  1. Slice the sides or the "cheeks" of the mangoes, avoiding the pit. If you're using frozen mangoes, skip to step 4.
  2. Make mango dices on one of the "cheeks" by making long parallel cuts then perpendicular cuts to make small cubes.
  3. Peel the rest of the mango "cheeks" (there should be 3) using a peeler or glass cup (just slide the mango through the rim of the glass).
  4. Place peeled mangoes (not the diced) in a blender. Add coconut milk and maple syrup.
  5. Blend until smooth.
  6. Scoop off a few mango dices and place in the popsicle mold.
  7. Pour blended mixture in the mold ¾ of the way.
  8. Top with more mango dices.
  9. Cap the popsicle mold and freeze for at least four hours.
  10. Thaw for a few minutes. Remove from the mold and serve immediately.
Notes
You could find yellow manila mangoes (aka Ataulfo variety) at most Asian grocery stores. You could use other kinds of ripe mangoes as alternative. Just add an extra tablespoon of sweetener.
