All credit goes to my mom for this recipe.

Pancit Palabok is a favorite snack (merienda) among Filipinos. It usually consists of 3 things: noodles, sauce and toppings.

It takes awhile to prepare but boy is it worth it! I made this dish and brought this to our vegan potluck and it was a winner!

2 packets of Excellent rice bihon (Excellent is the brand name!)

Ingredients for Sauce:
pounded garlic
chopped onion
julienned green beans
julienned carrots
corn starch
achuete or anatto powder (natural food coloring)
vegetarian broth
salt to taste

scallions (for garnish)
pounded vegetarian chicharon (I used the brand Martys)
fried tofu (seasoned with salt)
fried chopped shitake mushroom (seasoned with salt)
lemons (for garnish, or squeeze it in when served to add a little zest)


1. Sautee the garlic and onion
2. Add the green beans and carrots
3. Mix until tender
4. Season with salt


5. Boil about 4-6 cups of water
6. Put 2-3 tablespoon of powdered vegetarian broth (sold in Asian stores)
7. Put 1 teaspoon of anatto powder
8. Pour the cornstarch mixture (mix 1-2 tablespoon of corn starch and 1 cup of water BEFORE pouring it in to the pot, make sure to thoroughly dissolve the starch)
9. Keep mixing the pot until soup turns thick
10. Pour the vegetables to the pot, keep mixing and wait to boil


11. Boil 6-8 cups of water
12. Blanch the noodles
13. Remove and drain

*the noodles will turn soft very quickly


14. Pour the noodles to a serving tray/bowl
15. Pour SOME of the soup, mix them together until all noodles have SOME sauce (nice trick to evenly distribute the flavor)
16. When ready to serve, pour the rest of the sauce on top of the noodles
17. Add the toppings: fried tofu, fried mushroom, vegetarian chicharon and scallions
18. add lemons on the side
