ASTIG VEGAN BIBINGKA MIX

The idea behind the Astig Vegan Bibingka Mix started after learning that some of my friends don’t have any luck finding ingredients for my Bibingka rice cakes. A friend once messaged me on Facebook, saying he’ll try my recipe for Bibingka for a holiday party at work. Unfortunately he messaged me a little too late. The stores that carry ingredients like flaxseed meal have already closed and the party was for the next day. The Astig Vegan Bibingka is a Filipino rice cake that is incredibly buttery (without any butter), moist, and flavorful, so I was bummed out that he wasn’t able to make it for his party.

Some of my omnivore recipe testers would also have a hard time shopping for ingredients mainly because they’re still getting familiar with vegan ingredients. Oh how I wish I could make ingredients-hunting easier for my friends!

One day I was perusing the cookbook, “The Homemade Vegan Pantry” and saw the wonderful make-ahead baking mix recipes for biscuits, pancakes, pizza crusts, etc. Then an idea came to mind. I should make my own Bibingka mix! If I do, my friends will have an easier time making the Bibingka. I tested this idea when my friend invited me to sell at a holiday bazaar. The vegan Bibingka mix sold out and friends of friends on social media expressed they wanted to order it too.

Encouraged by the budding interest and demand, I thought of putting together a link where people could order the Astig Vegan Bibingka mix anywhere in the US. The mix already has all the necessary ingredients to make the rice cake, just pour coconut milk. No kneading, no proofing, no ingredients-hunting, no problem.

The mix is naturally gluten-free with the highest quality, mostly organic ingredients that I have carefully picked and put together: organic rice flour, organic sugar, organic flaxseed meal, organic baking powder, and sea salt.  It could last up to three months in the pantry and could serve 10-12 people (I love baking it in mini muffin pans which yield 48 cakes). It’s only $5 with a flat shipping fee so you could purchase as many as you wish.

The mix would be a great gift for loved ones or for yourself for the holiday season or for any occasion. The Bibingka mix could get even more heavenly when topped with vegan butter, vegan cheese, and/or grated coconut and served with hot coffee or tea.
